My Gluten Free Thanksgiving - Dessert

I have been Gluten Intolerant for a number of years, but with Thanksgiving being my favorite holiday (due to the food) I had to come up with a Gluten Free Thanksgiving meal that I could safely eat and still tasted great.  I made my entire Thanksgiving dinner on Sunday this year so I could take it easy on Thanksgiving and have leftovers the entire week!

On The Menu:

1.  Turkey
2.  Gluten Free Stuffing
3.  Mashed Potatoes
4.  Gluten Free Gravy
5.  Organic String Beans
6.  Gluten Free Pumpkin Pudding
7.  Homemade Whipped Cream

If you have subscribed to my newsletters, you have received all of my Thanksgiving recipes so far.  But we can’t forget dessert!!

Pumpkin Pie Pudding: 

  • 1 cup canned coconut cream
  • 1/2 cup canned pumpkin
  • 1 Tablespoon of Raw Honey or Grade B Maple Syrup or 6-10 drops of Stevia liquid (to taste)
  • 1 1/2 tsp ground cinnamon
  • 3/4 tsp ground nutmeg
  • 1/2 tsp bourbon vanilla
  • 1/4 tsp pink sea salt

Put all of the ingredients into a bowl and blend with a hand held, electric blender on low.  Cool in refrigerator until firm.

Homemade Whipped Cream:

  • 1 carton of organic heavy whipping cream
  • 6- 9 drops of stevia liquid
  • 6 drops of bourbon vanilla

Put a silver or metal bowl and the electric beaters into the freezer at least 1/2 hour prior to making the whipped cream.  Put all ingredients into the frozen bowl and whip with the electric beaters until it turns into whipped cream (3 to 5 minutes approximately).  Be careful to not whip too long once it turns into whipped cream or you will have butter.
